Mozzarella is one of the cheeses that everybody knows, even if it’s only because it is one of the basic ingredients for any pizza. But perhaps not everybody knows that there are different kinds and that the very best of all is Mozzarella di Bufala Campana, which has a Protected Designation of Origin status.
Although it is originally from Italy, today mozzarella made from water buffalo milk is produced in many countries including, very recently, Catalonia. However, Italy alone is responsible for the production of 33,000 tonnes a year of this pasta filata cheese, rich in calcium and highly nutritious, while low in fats.
Buffalo mozzarella is versatile and goes very well with pasta, calzone, vegetables, salads or simply with toast and olive oil. At El Racó, you can taste it in one of our traditional pizzas, the Queen Margherita of Italy, with stewed tomato, Parmesan and a touch of basil.
